Let's get this straight: whilst there are as many fast food outlets in Kerry as in Kentucky, nowadays there are many good establishments in Ireland where well-trained chefs use the best of local produce to raise the standard of gastronomy—and it is our intention to present them to you—with great pleasure.
This tour has been produced under the influence—the influence of Mesdames Courtney and Hudson, who are both excellent home cooks and bakers. So you can be assured that the research has been both diligent and thorough.

With his own TV show and cookery books, Neven (see accompanying article) is one of the most conscientious and unassuming chefs you'll find anywhere.
